Gina’s Pinwheel Cookies
½ cup butter
1 egg yolk
½ cup sugar
1 teaspoon vanilla
1 ½ cups flour
½ teaspoon baking powder
¼ teaspoon salt
3 tablespoons milk
1 square unsweetened chocolate, melted and cooled
Cream butter and sugar, then add egg yolk and vanilla. Add dry ingredients alternately with milk. Divide dough in half; to one half add the melted chocolate and mix well. Place dough between two sheets of waxed paper; roll each half of dough to 1/8 inch in thickness. Place white part on dark dough. Remove paper and roll as for a jellyroll. Wrap in waxed paper. Chill overnight. Slice 1/8 inch thick; bake on ungreased cookie sheet for 8-10 minutes at 375 degrees.
